Chef 5 Bites: John Critchley

Chef John Critchley took over the kitchen at Urbana inside the Hotel Palomar in December. The Culinary Institute of America grad was born and raised in Scituate, Mass., a small suburban fishing town on the south shore of Boston. The one-time oysterman's passion for seafood is evident on his menus at Urbana. Check out a previous Eat This feature on one his terrific ocean-inspired dishes.
1. Palak Chaat at Rasika
2. Mini banh mi at The Source
3. Patatas bravas (**with special request of “Mark style,” which comes with chorizo) at Estadio
4. Steamed blue crabs at Captain White's at the Southwest waterfront's fish market
5. Baja fish tacos at Taqueria Poblano in Del Ray
Where do DC's top chefs eat when they're not on the clock? Find out in CHEF 5 BITES.

I'd just like to resume my call for a moratorium on the use of Palak Chaat in 5 Bites... Because we all already know how freakin' good it is.
