Sheppard Mansion's Campari Cup

I love a Campari and soda in the summer. I love a Pimm's Cup in the summer. And if they had a baby, it would be the delicious love child that Sheppard Mansion's Karen Van Guilder Little served me called the Campari Cup.

Campari Cup
makes 1 drink

1/2 oz honey mint syrup (recipe below)
1/2- to 3/4-inch slices of English cucumber
3/4 oz lime juice
1 oz gin (Sheppard Mansion uses Pennsylvania's Bluecoat gin.)
1 oz Campari
club soda

Muddle a cucumber slice with honey mint syrup in a shaker. Add lime juice and gin. Shake. Pour into a highball glass. (We do not strain it, but you could strain the cucumber and mint out). Fill glass with crushed ice. Pour in Campari and stir a bit. Top with club soda then fill with more ice. Garnish with a cucumber slice.

Honey Mint Syrup
1 cup mint leaves
1/4 cup honey
3 tablespoons water

Heat the honey and water in a small sauce pan until simmering. Remove from heat and add the mint leaves. Steep the mint leaves in the syrup for an hour.
