• The creators of Chipotle have released details on their new restaurant concept, slated to debut this summer in DC.
ShopHouse Southeast Asian Kitchen will feature Southeast Asia cooking with a menu highlighting sustainably raised ingredients. Like at Chipotle, you'll be able to customize your order.
Prince of Petworth spotted a license for the new concept at 1516 Connecticut Ave. NW.
The name comes from the traditional shophouses found around Thailand, Malaysia and Vietnam, where families live upstairs and run restaurants below.
“I have always believed that the Chipotle model would work well with a variety of different cuisines,” said Steve Ells, founder, chairman and co-CEO of Chipotle, in a release. “Chipotle’s success is not necessarily about burritos and tacos, but rather about serving great, sustainably raised food that is delicious, affordable, and convenient.”
“Anyone who has traveled throughout Southeast Asia can tell you that food there is served very fast – it’s also full of flavor, nutritious, and affordable,” said Ells. “This cuisine gives us a great opportunity to prove the idea that the Chipotle model can work with other cuisines.”
• Fabio Trabocchi's Fiola is now open at 601 Pennsylvania Ave. NW, the former Le Paradou space. Word from Metrocurean confidantes is that the space has been warmed up considerably and the food is off to a strong start.
• Taking over the former Il Mulino space, Lincoln Restaurant opened Monday at 1110 Vermont Ave. NW. The new spot from Hudson's Alan Popovsky features seasonal American cooking.
• Salt and Pepper, a restaurant from husband-and-wife team Nathan and Lindsay Auchter, will open soon in the old Kemble Park Tavern space at 5125 MacArthur Blvd., according to Nycci Nellis.
• The Washington Post reports that Donald Trump has purchased the troubled Kluge winery in a foreclosure auction.

I think Chipotle had the right idea to invest in Bobby Flay's next great American restaurant - tons and tons and tons of new theme ideas from the public. Looks like it will soon pay off...

I wish I could eat there when it opens but I do not see them settling the labor dispute before then.
